Uncovered records reveal the moment of creation went a little like this:
“This dish is boring.”
“Try putting some smoky hot sauce on it.”
“We don’t have any.”
“Let’s make some.”
It began with Jay and Cam building a smoker with their own hands and gathering the finest chillies. They roasted, they smoked, they blended, they tasted. They were resolute.
This had to be a sauce that was rich and smoky yet refined; sweat-head hot without sacrificing flavour. A burst of smoky hot goodness to elevate the backyard barbecue, spice up a Sunday roast and make falafel sing.
A condiment that would unite vegans and carnivores.
And so it came to pass, that in the beautiful Victorian gold-rush town of Mansfield, cradled between the peak of Mt Buller and the icy waters of the Howqua River, that The Embers Handmade Hot Sauce was born.
The secret of the Embers is in its simplicity. Just three Australian ingredients: chillies, vinegar and salt; no artificial anything and no sugar. However, only Jay and Cam know the exact recipe for The Embers Hot Sauce and it’s a secret they guard closely.
