Heat oil in a medium saucepan. Add diced meat and cook on high until sealed, then add diced potatoes.
Add simmer sauce and mix well.
Cover and simmer on low heat, stirring occasionally, for 20 minutes or until meat and potatoes are tender.
Stir in coconut milk and bring back to a simmer.
Remove from heat and serve hot with steamed Jasmine Rice.

2 Cups steamed Jasmine Rice
